Mushroom Tacos
King Oyster mushrooms
Mushroom broth
Taco spices (cumin, coriander, pepper, salt, chili powder)
Corn or flour tortillas
Chopped onions, tomatoes, cabbage, or other favorite taco toppings
Guacamole + Salsa
Plain yogurt or sour cream
Pickled onions + fresh cilantro
Saute chopped onions, garlic, spices, and whole King Oysters and a splash of mushroom broth on medium heat.
When mushrooms are soft and have absorbed most of the liquid, remove from pan and transfer to oven to bake at 400F for 10 minutes
Remove from oven and and shred from the top of the cap to the bottom of the stem with a fork.
Create your tacos with your shredded mushrooms and other favorite toppings.
