Chestnut Mushrooms
(PHOLIOTA ADIPOSA) one of our favorites and a great addition to soups and stir-fries, the chestnut has a strong stem and brown cap with beautiful gils that grow on the cap.
Flavor profile: earth & nutty; will definitely add flavor to your dish.

Pink Oyster Mushrooms
(PLEUROTUS DJAMOR) the pink color definitely pops and is a sign of warmer weather! The more you cook, the deeper the flavor develops.
Flavor profile: often described as meaty or ‘seafoody’ - and especially with it’s vibrant pink color can be a substitute or addition to salmon, shrimp, ham, or bacon.

Golden Oyster Mushrooms
(PLEUROTUS CITRINOPILEATUS) with it’s small cap and small stem, these beautiful vibrant golden mushrooms are a beautiful addition to any meal and are perfect cooked with a whole cap to be added to any dish or a vibrant garnish. Their color softens with cooking and they have an abundance of minerals, vitamins, and antioxidants.

Shiitake Mushrooms
(LENTINULA EDODES) one of the most popular mushroom species, shiitakes have a strong flavor profile and hold their shape when cooked. They are renowned for their medicinal benefits, including reducing cholesterol, aiding in gut health, reducing inflammation, and cancer fighting properties.

King Oyster Mushrooms
(PLEUROTUS ERYNGII) also known as the King Trumpet mushroom, this is the largest species of the oyster family. This mushrooms grows a more stemmy mushroom with a smaller cap, which makes it perfect for slicing the stem and broiling for a scallop-like style or shredding to make some delicious mushroom tacos.

Blue Oyster Mushrooms
(PLEUROTUS COLUMBINUS) this large capped are almost all cap with very little stem. Their large size is held together with its strong gilled backside which makes them perfect for slicing and adding to stews or soups.

Black Pearl Oyster Mushrooms
(PLEUROTUS OSTREATUS) an incredible hybrid, developed in Japan, of an oyster and trumpet. Giving this dense mushrooms a soft and tender stem, great for slicing and saute’ing or grilling.

White Oyster Mushrooms
(PLEUROTUS OSTREATUS) we grow a species of white oyster mushrooms that maintain a crisp, snow white colour and a small’ish cap and mild flavor. The perfect mushroom to add to a dish that you want to the mushroom to soak up all the flavour. and add a delightful umami finish.

Pioppino Mushrooms
(AGROCYBE AEGERITA) With their small stems and velvety brown caps, these are delicious on their own as a side dish or atop a main meal. They are rich in antioxidants and high in polysaccharide content.
Flavor profile: woody and nutty, with a little peppery finish.
